Quarter pineapple slices. In a 12 inch non stick skillet heat 2 tsp oil over med heat. Add pineapple,<br />
cook about 2 minutes per side until golden brown. Remove from skillet and set aside.<br />

Pour remaining oil into hot skillet. Add carrots, cook stirring frequently for 5 min or til tender. Add garlic and ginger and cook 30 seconds.<br />
<br />
Stir in brown rice, garbanzo beans and peas. Add soy sauce. Cook and stir about 4 min or until heated through. Stir in cilantro. Return pineapple to pan.<br />
<br />
To serve squeeze lime over all. Makes 4 servings.<br />

Also, one in which you can scratch what did not work.</div>

A great Turkish DelightOne of my favorite local restaurants is Zeytin's, a Turkish place that has some wonderful vegetarian entrees. I always get the stuffed eggplant when I go there. I found an easy recipe that closely mimics my favorite dish. You cover a split eggplant ( cut side up)with sautéed onions, diced tomatoes (I used a can of diced tomatoes)and garlic that you have cooked in olive oil until onions translucent. The more onions and garlic the better. I also diced half a green pepper too. Add a cup of water and cover it with aluminum foil. The recipe called for 40 minutes, but a good hour is really needed. You want the eggplant to be like custard and wonderfully creamy. I served it with jasmine rice.
